Oscypek, Bundz, Bryndza - three different types of traditional sheep milk cheeses. Delicacies that, thanks to the highland shepherds, evoke increasingly delicious associations not only among Polish connoisseurs of good cuisine. Regional products made from sheep milk have a very good reputation, are healthy, and are eagerly bought both by the residents of Podhale and visiting tourists.
How can one experience the unique taste of sheep delicacies? The simplest way is to come to Nowy Targ during the shepherding season - from May to September - and buy them directly from the producer. And there are many good shepherds in the city and around it! The oscypek trail around the capital of Podhale consists of eight huts, from most of which you can bring not only real sheep bundz, bryndza, or oscypek but also unforgettable memories of the views from the pastures located on the southern slopes of the Gorce Mountains.

Baca Klimowski
It is easy to reach Władysław Klimowski, the president of the Regional Association of Sheep and Goat Breeders, as his hut is located just behind the Nowy Targ hospital. It is also on the blue trail from Nowy Targ to Bukowina Obidowska, so when planning such a trip, it is worth leaving some space in your backpack for oscypek.
Baca Jarząbek
The hut is just behind the Roundabout named after John Paul II when leaving Nowy Targ towards Białka Tatrzańska. It's worth taking ten minutes to stop at the shepherd's hut.
Baca Łaś
Stanisław Łaś shepherds along the road from Nowy Targ towards Bukowina Tatrzańska and Łysa Polana. It is quite possible that while buying bundz from him, you will see a small plane towing a glider from the nearby sports airport to the famous "Tatra wave". Parachutists often face the dilemma of whether to land at the destination or by the hut.
Baca Pawlikowski
Look for Stanisław Pawlikowski's hut while driving "Zakopianka" just after Nowy Targ, past the gas stations. There is no worry: the hut is by the road, but the sheep graze away from it, on the other side of the parallel Biały Dunajec stream, near the Bór na Czerwonem reserve.
Baca Molek
Józef Molek grazes sheep on Ibisor. It is easy to reach him by taking an hour's walk from the City Park along the Czarny Dunajec stream. Continuing upriver, you can see an interesting old railway bridge and... many anglers.
Baca Wolski
Jacek Wolski chose Kokoszków as the place to graze sheep. Besides the fact that students from the nearby Podhale State Vocational University occasionally come here for oscypek, it is a very peaceful place. Not far from here, the Dunajec River begins, formed from the streams of Biały and Czarny Dunajec. From here, you have a beautiful view of the Nowy Targ Basin, the entire city, and the panorama of the Tatra Mountains.
Baca Gach
It is the hardest but the most pleasant to reach the shepherd from Turbacz. Krzysztof Gach, the youngest shepherd on our trail, runs his farm on Hala Długa in Gorce. His hut and sheep flock are clearly visible from the Turbacz shelter - a mandatory point of every serious trip in our region.
